Easy Horchata

This is perfect for a warm fall day or anytime.   2 - 3 c. almond milk 1 c. rice 2 c. cold water 1/4 tsp. ground cinnamon  1 T. honey Place rice in a clean bowl, pour enough water to cover rice. Cover bowl with plastic wrap and place in refrigerator overnight to let rice soak. When ready to make the horchata, remove bowl from refrigerator.  Have a clean sieve over a clean measuring cup to catch rice water and strain the rice through sieve. Combine rice water, almond milk, cinnamon and honey in a blender. Blend for 20 - 30 seconds or until blended. Serves 4.

Lillibet Martini

Prayers, peace, love for the United Kingdom. This cocktail was inspired by and in honor of Her Majesty. 4 - 6 oz. gin 2 oz. vermouth 1 lemon peeled Ice cubes  With a vegetable peeler, peel 4 lemon peel from a lemon. C hill 4  clean martini glasses in freezer for a few minutes. Place ice cubes in cocktail shaker.  In shaker combine, vermouth, gin. Shake well. Take glasses out of freezer. Strain martinis into glasses. Garnish glasses with lemon peels. Serves 4.
