Welcome Spring Smoothie

Tomorrow’s the first full day of spring. This is a perfect green smoothie for spring or anytime. 2 - 3 c. pineapple juice  1 c. baby spinach leaves 1/2c. cucumber  1/4 c. lime juice Ice Rinse spinach leaves, pat dry. Rinse, chop ends from and cut cucumber in half. Chop cucumber, set aside. Rinse and cut lime in half. In the bottom of a clean blender, add ice. Add remaining ingredients and blend for a few seconds until blended. Serves 4.

Award Night Gibson

 The Oscars are next week. This is perfect for watching the awards or anytime. I didn’t have any cocktail onions so I used shallots. You can also use pearl onions too. 4 - 6  oz. vodka or gin 1 shallot  1 - 1  1/2 oz. dry vermouth  squeeze of lime  ice  salt, pepper With a wet napkin, wet the rims of 4 martini glasses.  Sprinkle some salt and pepper on a shallow dish.  Place the glasses rim side down on the salted dish to coat. Place the glasses in the freezer to chill for a few minutes.  In a cocktail shaker combine: gin or vodka, ice,  lime juice, vermouth.  Shake for a few seconds to mix.  Peel, rinse chop shallot into piecess Remove glasses from freezer, strain martinis into glasses.  Thread shallots through 4 toothpicks. Garnish gibson with the shallots. Serves 4.
